뚱딴지(국화과 해바라지속) Helianthus tuberosus L.

집 마당 가에 울타리처럼 심겨져 있는 뚱딴지다.

이 녀석은 자색의 뿌리를 가지고 있는데 이른 봄에 뿌리를 캐어서 초절임으로 해 두고 식용을 하고 있다.

 

북아메리카 원산의 한해살이풀로 전국의 밭에 심어 기르거나, 길가에 저절로 자라는 귀화식물이다.

꽃은 관상용으로, 덩이줄기는 식용 및 사료용으로, 뿌리는 약용으로 사용한다.
